Apricot Sponge

 
 

 

 
Just in case Aunt Pit didn't include the details of using powdered gelatin, here they are:
Sprinkle gelatin on cold liquid.
Let stand for 5 to 10 minutes.
Add warm liquid or heat gently.
Stir until dissolved.

3 egg yolks
2/3 cup sugar
2 cup milk
1/8 teaspoon salt
2 tablespoons gelatine
4 tablespoons cold water
3 egg whites beaten
2 cups apricots
1 tablespoons lemon juice

beat yolks
add sugar
add milk & salt

heat in double boiler until little thick

stir constantly and do not overcook

soak tel and water 5 min.

ad to heated custard mixture

remove

 

A double boiler is a saucepan with a shallow pan that fits inside. The bottom pan is filled with water. Delicate ingredients are cooked in the top pan.
